High Protein Blueberry twists

Ingredients
2 sheets puff pastry
1 cup alterego cottage cheese
1 cup frozen blueberries
Maple syrup to taste
1 tsp gelatin
1 egg

Directions:

  1. Add the blueberries and maple syrup to a saucepan and heat gently. stir in the gelatin, cook for a few minutes until thickened, then set aside to cool.
  2. Spread the cottage cheese evenly over one puff pastry sheet, then layer with the blueberry jam.
  3. Place the second puff pastry sheet on top and press gently.
  4. Cut lengthwise down the middle, then slice into strips and twist each one.
  5. Brush with beaten egg and bake in a preheated oven at 190°c for 25–30 minutes, or until golden brown.
  6. Finish with a sprinkle of icing sugar or protein powder.
