Ingredients
340g alterego cottage cheese
150g almond flour (or a mix of almond and coconut flour for more texture)
2 large eggs
1 tsp baking powder
1 tsp garlic powder
1 tsp onion powder
½ tsp dried oregano or Italian seasoning
25g grated Parmesan cheese
Salt and pepper, to taste
15ml olive oil (for greasing)
Optional
50g grated mozzarella cheese (optional, for added stretch and chewiness)

Directions:

  1. Preheat the oven to 190°C. Line a baking tray or pizza stone with baking paper and lightly grease with olive oil to prevent sticking.
  2. In a large mixing bowl, combine the cottage cheese, almond flour (or almond–coconut flour blend), eggs, baking powder, garlic powder, onion powder, oregano or Italian seasoning, Parmesan cheese, salt, and pepper. Stir until smooth and well combined. For a slightly chewier crust, mix in the mozzarella cheese.
  3. Transfer the dough to the prepared tray or stone. Use your hands or a spatula to press and spread it into a circle or rectangle, about 6mm thick. Keep the edges slightly thicker to form a crust.
  4. Bake for 18–20 minutes, until golden brown and firm to the touch. The edges should be crisp and lightly golden.
  5. Remove from the oven and add your pizza sauce, cheese, and chosen toppings. If using mozzarella cheese, sprinkle it on now.
  6. Return to the oven for a further 8–12 minutes, until the cheese is melted and bubbling.
  7. Leave to cool for a couple of minutes before slicing and serving.
