High-Protein Chocolate Cottage Cheese Easter Mousse

200g alterego cottage cheese
2 tbsp cacao powder
3 tbsp maple syrup
Mini Eggs
20g dark chocolate chips
½ tbsp coconut oil
1 hollow Easter egg (for serving)
Directions:
Add cottage cheese, cacao powder and maple syrup to a blender and blend until completely smooth and mousse-like.
In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second bursts, stirring until smooth and glossy.
Carefully halve the Easter egg to use as a serving bowl.
Spoon the chocolate mousse into the Easter egg.
Drizzle over the melted chocolate and top with crushed Mini Eggs.
Refrigerate for 20 minutes until thickened.
Serve chilled.
