High-Protein Chocolate Cottage Cheese Easter Mousse

Ingredients
200g alterego cottage cheese
2 tbsp cacao powder
3 tbsp maple syrup
Mini Eggs
20g dark chocolate chips
½ tbsp coconut oil
1 hollow Easter egg (for serving)

Directions:

  1. Add cottage cheese, cacao powder and maple syrup to a blender and blend until completely smooth and mousse-like.
  2. In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second bursts, stirring until smooth and glossy.
  3. Carefully halve the Easter egg to use as a serving bowl.
  4. Spoon the chocolate mousse into the Easter egg.
  5. Drizzle over the melted chocolate and top with crushed Mini Eggs.
  6. Refrigerate for 20 minutes until thickened.
  7. Serve chilled.
