Cottage Cheese Breakfast Tacos

Ingredients
200g alterego cottage cheese
1 egg white
1 tbsp plain flour
Salt & pepper
Italian herbs
Garlic powder
Avocado
Eggs (fried or poached)
Italian herbs
Chilli flakes

Directions:

  1. Preheat oven to 200°C.
  2. In a bowl, mix cottage cheese, egg white and flour until combined.
  3. Line a baking tray with parchment paper.
  4. Spread the mixture into 2 thin circles to form taco bases.
  5. Season with salt, pepper, Italian herbs, and garlic powder.
  6. Bake for 20–25 minutes until golden and set.
  7. Allow to cool slightly so they firm up.
  8. Top with mashed avocado and a cooked egg.
  9. Finish with Italian herbs and chilli flakes, then serve.
