Creamy Courgette Cottage Cheese Pasta

Ingredients
200g alterego cottage cheese
2 courgettes, sliced
½ head garlic (or whole head if preferred)
Olive oil
Salt & pepper
Fresh basil leaves
150g cooked pasta (per serving)
½ cup pasta water
Parmigiano, to serve

Directions:

  1. Preheat oven to 200°C.
  2. Place sliced courgettes and garlic on a baking tray.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast for 30–35 minutes until soft and golden.
  5. Add roasted courgettes and garlic to a blender with cottage cheese, basil, and pasta water.
  6. Blend until smooth and creamy.
  7. Toss the sauce through cooked pasta until fully coated.
  8. Serve with grated parmigiano on top.
