Blueberry Cheesecake Cottage Cheese Overnight Oats

Ingredients
100g alterego cottage cheese
40g oats
120ml milk
1 tbsp chia seeds (6g)
½ cup frozen blueberries
2 tsp maple syrup
½ tsp vanilla extract
Optional
50g whipped alterego cottage cheese
Fresh blueberries
½ digestive biscuit, crushed

Directions:

  1. Add oats, cottage cheese, milk, chia seeds, blueberries, maple syrup and vanilla to a bowl or jar.
  2. Mix well until fully combined.
  3. Cover and refrigerate for at least 2 hours, ideally overnight.
  4. When ready to eat, stir if needed.
  5. Top with whipped cottage cheese, extra blueberries and crushed digestive biscuit.
  6. Serve chilled.
