High-Protein Raspberry Cottage Cheese Cheesecake

Ingredients
200g alterego cottage cheese
1 egg
1 tbsp cornflour
1–2 tbsp honey or sweetener (to taste)
50–70g frozen raspberries

Directions:

  1. Preheat oven to 170°C.
  2. Add cottage cheese, egg, cornflour and honey to a blender and blend until smooth.
  3. Pour the mixture into a ramekin or small baking dish.
  4. Add frozen raspberries on top or gently swirl them into the mixture.
  5. Bake for 25–30 minutes, until just set in the centre.
  6. Allow to cool for 10–15 minutes to firm up before serving.
