Ingredients
200g alterego cottage cheese
200g pasta (your choice, cooked al dente)
1 medium onion, finely chopped
2 cloves garlic, minced
30g tomato purée
1 tsp dried oregano
½ tsp paprika
250g lean turkey mince
1 large roasted red pepper (about 150g) or 1 jar, drained
120ml reserved pasta water
100g grated mozzarella cheese (for topping)

Directions:

  1. Cook the pasta according to the packet instructions until al dente. Drain and reserve 120ml of the pasta water.
  2. Heat a splash of olive oil in a large frying pan over a medium heat. Add the onion and garlic and cook for 4–5 minutes until softened. Stir in the tomato purée, oregano, paprika, and a pinch of salt and pepper. Cook for 1 minute until fragrant.
  3. Add the turkey mince to the pan and cook, breaking it up with a spoon, until browned and fully cooked.
  4. Transfer the roasted red pepper, cottage cheese, and the onion-garlic mixture to a blender. Add the reserved pasta water and blend until smooth and creamy. Taste and adjust seasoning if needed.
  5. In a large mixing bowl, combine the cooked pasta, turkey mince, and creamy sauce. Stir until evenly coated.
  6. Transfer the mixture to a baking dish. Sprinkle the mozzarella evenly over the top. Bake in a preheated oven at 180°C (160°C fan) for 20 minutes, or until the cheese is golden and bubbling.
  7. Leave to cool slightly before serving.
