Healthy Carrot Cake with Cottage Cheese Frosting

Ingredients
200g alterego cottage cheese
80g Greek yoghurt (approx. 3 tbsp)
2 tbsp maple syrup
1 banana, mashed
2 eggs
½ cup maple syrup
2 carrots, shredded
½ cup chopped walnuts (50g)
½ cup oat flour (75g)
½ cup plain flour (75g)
1 tsp baking powder
⅓ tsp baking soda
1 tsp cinnamon
Pinch of salt

Directions:

  1. Preheat oven to 180°C.
  2. In a bowl, mix together the mashed banana, eggs, and maple syrup.
  3. Add shredded carrots and chopped walnuts, then stir to combine.
  4. Add the oat flour, plain flour, baking powder, baking soda, cinnamon, and salt. Mix until just combined.
  5. Pour the batter into a lined baking tray.
  6. Bake for 40 minutes, or until cooked through.
  7. While the cake bakes, blend cottage cheese, Greek yoghurt, and maple syrup until smooth, then chill in the fridge.
  8. Allow the cake to cool completely.
  9. Spread the frosting evenly over the top and finish with extra walnuts.
