High Protein French Toast Bites

Ingredients
1/4 cup blended alterego cottage cheese
2 slices of toast
1 egg
1 tsp cinnamon
1/4 cup milk
Vanilla extract
Pinch of salt

Directions:

  1. add the egg, blended cottage cheese, cinnamon, milk, vanilla, salt and sweetener to a bowl and mix well.
  2. Cut each slice of toast into bites (2 cuts lengthways + 2 cuts across).
  3. Add the toast bites to the batter and let them soak.
  4. Heat a pan on medium heat and add a small cube of butter.
  5. Cook the french toast bites on all sides until golden.
  6. Serve with extra cottage cheese or greek yogurt, berries and maple syrup 🤍
